Fiber is Good... No Sh.. Kidding!!

I went in for my 60,000 mile checkup last week and found that the level of cholesterol in my blood is at an unhealthy level. I promised myself that by the time I go back to the doctor in October, my blood cholesterol counts will be many points lower.
Here's a sample plan;

First thing in the morning I will drink a cup of OJ with a tablespoon full of Psyllium powder equaling 5 grams of corn husk fiber. That is followed by a cup of steel cut oatmeal with fat free half and half and a half an apple chopped.

At around 9:45 am eat about 5 or 6 almonds.

For lunch there's homemade vegetable soup with tofu and the other half of the apple.

3pm a few more almonds

Dinner consists of a veggie burger on a whole wheat bun with soy cheese, lettuce and ketchup.
Lima beans with heart smart margarine and a fat free yogurt.

I will drink many glasses of H20 and work my way up to another Tablespoon of the powdered
corn husks as a nightcap maybe mixed with green tea this time.

I feel so clean and light! I must dance!!!!

...though we have never met.
i think of you often...so happy to see that you're blogging beyond our 23 things! and you're right. fiber is good...those who are often around me are unfortunately subjected to my enthusiasm about things...aka...i often preach the gospel of good eats. just because it's helped save my life...a lot of my recipes are high-high in fiber. but beyond that...i do hope we can meet someday. when i add songs, i think...i hope she enjoys these just as much. - jen
